At What The Taco, every day is Tuesday. Cory Thompson is the founder of What The Taco, a food truck offering quick service and delicious food.
The roots of What The Taco go back to a taco-loving family and a promise Thompson made to his mother. “Originally, What The Taco started as a new career path challenge,” he says. “It was a promise to my deceased mother to start a business and out of my love of making people happy through food.”
The Gem City native loves creating happiness for others through food, and hopes to bring a unique dining experience to foodies throughout the Miami Valley region and beyond.
When you visit What The Taco, you’ll find something for everyone. “We have steak, chicken, pork, seafood and even vegan and vegetarian taco options,” says Thompson. “We also have nachos, a variety of salsas and soups, and more.”
You can catch What The Taco traveling throughout the region. Thompsons says that they will travel as far north as Wapakoneta, west as far as Eaton, east as far as Columbus, and south as far as Cincinnati. “We really are all over,” he adds.
He says that what makes What The Taco unique is that the food is always fresh, Taos are overstuffed and comes on a flour tortilla with white queso, refried beans or guacamole, and a hard shell that has different toppings inside.
In addition to What The Taco, Thompson is also the Vice President of the Dayton Food Truck Association, so his dedication to supporting Dayton’s food scene and its entrepreneurs is unwavering.
Thompsons says that he’s excited about the future of What The Taco. “We will have a second trailer out around July and a new food truck concept that is a spinoff of What The Taco this year, too,” he says.
