The Chic Guide: What is Fibonacci Brewing Company?
Betty Bollas, Owner of Fibonacci Brewing Company: Fibonacci Brewing Company is a brewery and urban farm with on-site Airbnbs. 

The Chic Guide: What’s the inspiration behind it?
Bollas: The Fibonacci numbers create a mathematical equation found throughout nature. We focus on using local ingredients in the majority of our products that we grow, forage, or purchase from local farms or companies.

Bollas: Myself and my husband Bob are behind Fibonacci Brewing Company!

The Chic Guide: What makes Fibonacci Brewing Company unique?
Bollas: We participate in numerous equity and community outreach programs like the following: 

Ellequate is the nation’s leading data-informed employer certification and cohort-based leadership program for intersectional workplace equity. We became certified through this program.

We offer Aunt Flow products in our bathrooms, which also support their program to ensure everyone has access to period products.

We have participated in the Ask for Lexi bystander training and intervention program through Women Helping Women for numerous years. 

We offer a monthly farms market to assist with the food deserts and food oppression in our neighborhood. 

We participate in the Little Free Library Read in Color Program, which is a new initiative bringing diverse books to Little Free Library book-sharing boxes around the world. Read in Color distributes books that provide perspectives on racism and social justice; celebrate BIPOC, LGBTQ+, and other marginalized voices; and incorporate experiences from all identities for all readers. Less than 25% of all children’s books depict non-white characters. We believe everyone should be able to see themselves in the pages of a book. We also know that books can be a window into experiences that are different from our own. By reading diverse books, we can increase understanding, empathy, and inclusion. We’ve donated over 1,000  books in the last year and a half.

We participate in the Cincinnati Bell WiFi Program for Mount Healthy by hosting and paying for the electricity on a wi-fi access point to provide free public wi-fi as part of a digital equity project to expand and provide free high-speed internet access in support of education, jobs, and healthcare.

The Chic Guide: What’s on the drink menu at Fibonacci?
Bollas: We are known for using local ingredients that we grow, forage, or purchase from local farms in the majority of our beers. A popular example is Horapha, which is a cream ale with lemon, honey, and Thai basil.

The Chic Guide: Can you share more about the urban farm and your Airbnbs?
Bollas: We are the only urban farm brewery in the country. We have a variety of chickens and three dwarf Nigerian goats named Fiddlehead, Honey, and Buttercup. We have a second taproom in the old farmhouse that is located on our property. In the upstairs, we have two Airbnb rooms with king-size beds, their own bathrooms, and a coffee/tea station. We rent them year-round for $99 a night here

The Chic Guide: Is there anything new on the horizon?
Bollas: We hope to start offering our own food in 2023!
