The Chic Guide: What’s the inspiration behind it?
Hilgeman: We are inspired by our city and the stories of its past, present, and future. We like to tell these stories through our Spirits.
The Chic Guide: Who’s behind it?
Hilgeman: Dayton Barrel Works is a family-owned and operated Distillery that shares the same ownership as Dayton Beer Company. Our operating manager is myself, Pete Hilgeman; Head Distiller is Bill Hockett; and Assistant Distiller is Drew Zaret.
The Chic Guide: Where are is Dayton Barrel Works located?
Hilgeman: We are in Downtown Dayton at 318 East Second Street.

Hilgeman: You can find expertly crafted cocktails, Spirit Flights, Bottles of our spirits to purchase, and a large selection of Whiskeys and Bourbons that can all be enjoyed in our historically renovated space that houses our cocktail bar.
The Chic Guide: What makes Dayton Barrel Works unique?
Hilgeman: We focus on using the highest quality ingredients to make our spirits that include botanicals, barrels, water, grains, etc, and focus on the highest quality possible when we decide to create them. Our distillery and cocktail bar are in beautifully renovated spaces that date back 100 years and all of our brands tell the stories of who we were, who we are, and who we will become.
